#1 The language was Turkic, not Turkish. The difference being that Turkic has many different variations, and was very diverse and widespread particularly in the middle ages with impact into the Byzantine Empire. Turkic languages have been known to exist for many centuries across North Central Asia and across what we know today as Russia and Europe.
