#3 According to this site it is molten plastic and is used to create a long lasting replica of a lettuce leaf. Why the need is my question.

It might be for advertising and exhibition purposes. Ice Cream commercials f.ex., are plastic all the way, and wax and all stuff. In this case, it's prob a longtime exposure.

To answer #3:
#4 and #7 are perfectly correct. In several Asian countries, restaurants have showcases of their foods by the entrance. For me as a foreigner, it's incredibly helpful when the alternative is Japanese-only menu :-) Of course everything in those showcases is plastic, including the soups, beers, ice cream, everything -- but HONESTLY it looks exactly like the real thing, fresh from the kitchen. It's amazing.

I've seen this in Asian restaurants in London too. I was very impressed with the realism of the models.
Nice to see an example of one in the making.
