Only problem with this technique is, if you go for seconds all the sauce is absorbed and the pasta is all squishy.

I really don't like those "you are doing it wrong" people. If you can properly explain it, sure then maybe i'll switch methods, but for now I like how some of the pasta is dry and some of it is covered with sauce. I don't like the oily texture on pasta. So i'm not doing it like some italian dude is doing it. Doesn't mean I'm wrong.

#7 There are multiple (right) methods . I ike it the easy way . I just make the sauce, leave it on a small flame, cook the pasta, scoop some pasta water in the sauce, drain the pasta and throw it in the sauce imediatly before serving.
Yeah pasta in a 3 star Italian restaurant is fancy with timing to perfection. A maccaroni meal to eat in front of tv is even more easy. Add 1 cup of pasta to two cups of boiling water, leave it for 5 minutes. add a portion of instant tomato soup, heat it until it boils again, and dinner is ready.

I'm italian and this is bullshit. You never EVER "mantecare" with butter, perhaps with some olive oil (extravergine) but butter…HELL NO!

#1 if you're complaining about it being too much fat, chances are you're already fat and trying to get rid of some of that weight.
It's Italian food comon now, Look past the fat its all about the taste and cultural flavor, but hey if you rather eat grass then to each his own.
