It's a take on an Asian method of making 3D agar jelly cakes. It does look great in ice.

His ice block was made the same way as in this video, that I submitted some time ago, which shows how to create crystal clear ice blocks. My son made crystal clear ice cubes last summer for our mixed drinks. They make drinks look pretty, but to me either ice suffices.
