for those who wonder.. its called the "Leidenfrost effect"
http://en.wikipedia.org/wiki/Leidenfrost_effect

when your hand touches the liquied nitrogen, the nitrogen around your hand vaporizes immediately on contact. The resulting gas actually suspends the rest of the fluid, preventing any further direct contact between the liquid and your hand. This works because the temprature diffrence is greater then the so called "ledienfrost point".

#3 Thats not totally true as cold as liquid nitrogen to freeze your hand totally to smashing point would take around anywhere from 2-10 mins depending on a number of factors. We did it with in school with pigs trotter from 40c warmed in oven to totally frozen to the point of being able to smash it took about 4mins at 2 mins only small bits fell off no terminator 2 effect!!

And that was a dead animal think about your blood flowing around your body it would make it even slower it would not freeze the or stop the blood flow straight away its very hard to freeze a flowing liquid even with -196c

You think thats good watch this guy spitting liquid nitrogen

It is the same thing you can do with molten metal if you wet your hand first.

Look up Mythbusters. They already tried the Terminator 2 stunt on a dead pig head. It didnt work at all. They tried a short amount of time and if i recall they also did a 5 or 10 minutes. It did NOT shatter at all. The problem is the muscle fiber keeping everything together. Im guessing for it to work it would have to be way cooler to crystallize everything.
