think its something along this basis. HEAT+MOISTURE=Presure then released quickley causing quick expansion of remaining water particles in the rice and make the rice explode.

not a great video quality but could explain.

If the corn cannot expand it gets overheated. they put it in a "container" and when he "pops" the lid, al the corn expands at the same time.
