The only thing confusing me, is they use their left hand to turn the bread. ( there is no toiletpaper and water is not often used in desert countries to wash hands)

Unfortunately our Western GI system, used to eat processed and "sterile" food and less fresh fruits and vegetables is weaker and more prone to some of the GI infections that people from there can handle without difficulty.
