You can see him pouring in the middle portion here. There was a top pour and bottom pour, than the videos where combined..

another way is to allow the water to flow to the back of the trough (the furtest point from our viewpoint ie the top tier of the trough)as in the model in #5 link (first vid) and the water would stay there looking like it was about to fall on to water wheel, then just have a small pump to pump water up from where it was filled in the video up the nearest vertical strut to the top and then flow out and drop onto the wheel.

i know what i mean, just hard to explain.
