they sand-blast it a bit, takes a picture, then sand-blast it some more.
same way you remove paint from cars before rust removal. google sand-blasting.

technology is amazing, in the past it had to be smaller, faster, better design and just overall as high quality as possible.

this is indeed some pretty old tech, we have been using this kind of sealing foam in our tractor tieres for over 14 years now, but i must admit this is the first time i´v seen it used in bike tires, we even tried it on my old bike once years ago and that didnt work.
