Must be an experience thing how he know's when the bike makes that sound, a lot of wind is about to blast in to his ears so he better make it Aerodynamic.

Most animals would do the same, that's why they have directional ears, to turn them towards the source, or away from it. It's more a nerve impulse than anything else.

Just to clarify for non-dogpeople: The laying back of the ears is a calming-signal that dogs use to comunicate distress or submission, in order to deescalate a situation. This dog basicly expresses his worry of the noise. I like the throttle-theory though.
