I think she did what everyone should do in this kind of situation. Keep calm, keep watching to the road for as long as you can. Keep your hands on the steering wheel. Yes i know that she didn't do that the whole time but consider that her arm temporary increased in weight.

#9 They learned me to release the steering wheel and hold arms in the air, not touching any part of the car if the car rolls upside down.

I've been in a couple of accidents, not nearly as bad as this one, but I saw me in her face. I know this because the first time was a situation like hers, with no oncoming traffic though, and my friends started yelling at me because I was laughing (I wasn't driving BTW). This is just the natural reaction of some people, you see what's going to happen, you know you can't control it so you just let go and enjoy the show. At least I feel like this.

#12 who is they? I've learned to keep your hands on the steering wheel in an accident. I also learned that if you are a passenger you should but your hands under your upper legs to prevent them from flying around
I've had a simulated car crash in a roll simulator and you realy need to make sure your arms aren't flying around. Else you will hurt them! You can't put your arms to the roof because the g forces won't let you!
Also make sure you tighten your seatbelt. one thing i've learned in the sim is that your seatbelt loossens up a little bit when rolling over. That little bit can make you bounce enough to get seriously hurt.
And about objects in a car: Consider that they increase in weight for short amounts of time. Something like a pen or a smartphone can get you hurt very badly.
