This is because sea salt is mostly Sodium Chloride, which has a crystal lattice structure in the form of a cube as can be seen here http://bit.ly/1mVZa3m - so those crystals which can grow ideally without any damage etc., they grow in form of a perfect cube.

Very awesome to see science happening in everyday random places...
