I find it very hard to believe he didn't have some backup plan in case he fell. Maybe he had his midget brother hiding under a bench, or a remote kill switch for the engine.

There was no stunt here. It's video editing tricks. Like #6 noticed, he exited boat without beer, while surfing he had a beer then he returned to boat without beer.
