It's considered bad to boil lobster alive...pouring soy sauce/sodium on a Cuttlefish is almost worse! (Can't say I didn't torture snails with salt when I was a kid though :S )

The cuttlefish is dead( they cut the brain out ). If its recently killed the muscles and nerves can still function and when the sodium is absorbed it generates nerve impulses that makes it twitch. Good way to see if its fresh but it's still a bit scary.
