Once you drink a glass of egg nog and get a chunk of chalaze in it, you decide from then on that the chalaze must always be extirpated.

While quite informative it does not help me get better at boiling eggs to perfection, sadly. I just can't get it right, years and years and still messes it up at times.

#3 huldu, average sized eggs, placed gently in almost boiling water:

6 min: runny soft boiled
7 min: creamy soft boiled
9 min: hard boiled

#3 Place the eggs in the smallest pan available and only add enough cold water to cover them. Put the lid on the pan and place over the highest heat possible.
When the water comes to the boil, remove the pan from the heat and wait for 6 minutes.
Works every time :)

From what I understand the time to boil an egg also depends on the altitude above sea level you are boiling the egg at. In theory clear water at sea level must boil at 100º C. The higher you go the lower the boiling point, so you are boiling the egg at lower temperature and in consequence it needs more time. I noticed that when I moved from my native town Plovdiv (Bulgaria) at around 160m above sea level to Madrid (Spain) at roughly 660m above sea level. From one day to the other 8 to 10 minutes of boiling an egg weren't enough, now to get a nice hard boiled egg I need at least 12 minutes.
What bothers me more than the timing is what can I do for the shells not to break during the boiling? I really hate that.
PS: I think I gave that topic too much thought. XD

#11 Slide the eggs very gently into the very hot, but not boiling, water from a spoon, but you're right, some still break. If the water does not have a rolling boil, you can leave the cracked egg in the hot water, the little bit of egg white that seeped out of the crack will solidify and "seal" the crack, the egg still becoming a hard boiled egg, not as flawless as the rest of them, but still good to eat..good luck :)
