This is called "Lanzhou Lamian", (Lanzhou is a Northwestern city in China, where this kind of noodle was originated; and Lamian means "stretched noodles";)

In a typical Lanzhou Lamian restaurant/diner/joint, you can choose the shape (band or column) and thickness of your noodle to your preference. Some 6 or 7 grades to choose from.

The noodle is served in a beef-chicken-herbs soup, with slices of beef and turnip, as well as shallot, coriander and fried red pepper on top. It is fascinating to watch the chefs stretch the dough like magic. So it is to start digging in.

It's suggested that you should go visit China when you have the chance. Lots of culinary pleasures to discover there, which will make you think that Americans really don't know how to cook.
